  1. Preheat your oven to 400 degrees F. Place your whole chicken on a baking sheet with a rack (optional). Remove the giblets from the inside of your chicken and dry it thoroughly with a paper towel.
  2. Liberally salt the inside of your chicken and place the halved lemon and halved garlic bulb inside the cavity. Rub olive oil on the outside of the chicken and season liberally with salt, pepper, and thyme.
  3. Roast the chicken for ~1.5 hours (20 minutes per pound) or until the juices run clear or a meat thermometer in the breast reaches 165 degrees F. Remove the chicken from the oven and gently cover it with foil and let rest for 15-20 minutes to keep it juicy.
  4. Slice the chicken and serve it with roasted root veggies (carrots, onions, beets make a great combo!) or a simple green salad with vinaigrette.
